I don't know who said this, but I'll quote it anyway, "When the going gets tough, the tough get going!" Those were the words that came to my mind when I discovered this sign in an old garage that belonged to the house where we once lived. It was well over ten years ago when Randy and his good friend, Kirk, decided to become "Norwegian Painters" in order to bring extra income into their households. Thanks guys! Looking back, I feel blessed to have a husband who has always done what was necessary in order to provide for his family. If you have one too, be sure and thank him for all he does for you and your family!

This was a delicious dinner! We served it over organic brown rice. This recipe is a complete meal when coupled with a crisp, green salad. The only thing I would do different is wait until the chicken is off the bones to add the potatoes. They don't take long to cook in the simmering stew. We say, "Try it, you'll like it!" Good recipe, Jessica! Onto to the next recipe, Louanne's "Ritz Chicken..."

CAN YOU HELP ME? (Please don't help this chicken... read on...)

Hello to all my faithful readers! I have been so busy that I have been forced to let some of my favorite activities go. Unfortunately, blogging is one of those favorite things. Home and family, church, and two in-home businesses have got me swamped... a very good thing, actually.

I have a request... Right now I have a freezer full of whole, cut-up, organic chickens. I am in need of some really good,
different recipes. I've baked it, barbecued it, and made it into soup. Is there anyone out there with a unique chicken recipe you'd be willing to share? Our family is not afraid to try new recipes and are in love with flavor! That this gentleman (probably Army) took such good care of it!

New blog, new recipe! I made these "Inger-Laylers" cookies from a recipe shared by Janie. (You can find the reason for the name on Janie's blog.) These cookies have a wonderful flavor and were so easy to put together. As with all oatmeal cookie recipes I've made, I always use half regular and half old-fashioned oats. After I've mixed them together, I allow the dough to rest for about 2 or 3 hours, giving the oatmeal time to bind to the other ingredients. In this recipe, I used a "Berry Medley" of dried fruit I purchased at Sam's. The 16-ounce bag was only $3.99, so I thought I'd give 'em a try in a cookie recipe. The next day Janie posted this one and the dried fruit was a fabulous replacement for raisins. Try it, you'll like it!
