New blog, new recipe! I made these "Inger-Laylers" cookies from a recipe shared by Janie. (You can find the reason for the name on Janie's blog.) These cookies have a wonderful flavor and were so easy to put together. As with all oatmeal cookie recipes I've made, I always use half regular and half old-fashioned oats. After I've mixed them together, I allow the dough to rest for about 2 or 3 hours, giving the oatmeal time to bind to the other ingredients. In this recipe, I used a "Berry Medley" of dried fruit I purchased at Sam's. The 16-ounce bag was only $3.99, so I thought I'd give 'em a try in a cookie recipe. The next day Janie posted this one and the dried fruit was a fabulous replacement for raisins. Try it, you'll like it!
