New blog, new recipe! I made these "Inger-Laylers" cookies from a recipe shared by Janie. (You can find the reason for the name on Janie's blog.) These cookies have a wonderful flavor and were so easy to put together. As with all oatmeal cookie recipes I've made, I always use half regular and half old-fashioned oats. After I've mixed them together, I allow the dough to rest for about 2 or 3 hours, giving the oatmeal time to bind to the other ingredients. In this recipe, I used a "Berry Medley" of dried fruit I purchased at Sam's. The 16-ounce bag was only $3.99, so I thought I'd give 'em a try in a cookie recipe. The next day Janie posted this one and the dried fruit was a fabulous replacement for raisins. Try it, you'll like it!

The ingredients...

Adding the vanilla...

The walnuts...
Into the oven they go!

Ready to eat! Actually, this is as far as they got. They were eaten before I could display them on a pretty plate.

Those look good - if you ever needed, you know, a taste tester, I think I know someone who would be willing to take the job. :) xoxo RLC
