Believe me...

...when I tell you that THIS is delicious!  Before I caught this miserable virus (it's been nearly 2 weeks now), I made this recipe for Randy along with Cajun salmon and a great big salad.  Not one strand of spaghetti squash remained in the dish - it's THAT GOOD.  If I could give you one tip, I would say to bake this in a dish that will keep the ingredients at two inches deep - never more!  It browns much nicer that way.  Also, NEVER microwave your food! This recipe says to microwave the squash, but you can steam it instead - that's what I did and it worked perfect.  Enjoy!

PS - A medium-sized spaghetti squash weighs about three or four pounds at the grocery store.
